Delicious Green Soup
This soup can be made with any green vegetables and it is delicious to vegetable lovers and vegetable haters alike! So easy, good and nutritious!
Ingredients:
1 organic sweet potatoes
½ chopped onion (red or white) and/or 2 stalks chopped celery
1 organic veggie Boullion cube or your choice of spices (good options: berbere spice, cumin, paprika, turmeric).
An assortment of organic green vegetables (choose your favorites or what’s available that season! I usually pick 3-4 different types including kale, spinach, collards, swiss chard, beet greens, broccoli, bok choy, etc. All greens should be washed and chopped.
½ jalapeno pepper (optional)
Few slices ginger
Splash of cream, soy milk, or coconut milk (optional)
Instructions:
Coat a large stainless-steel pot pan with olive oil over med-high heat. Sautee onions and celery for five minutes. Add chopped sweet potatoes and your spices and sauté in olive oil for another 5 minutes.
Add in all your chopped green vegetables, jalapeno, and ginger along with pure water to top the veggies.
Bring to boil. Reduce heat to med/low and cook for 25-30 minutes or until veggies are cooked. Turn heat off.
After soup has cooled a little, puree in a blender.
For the finishing touch, you can add a splash of organic cream, organic soy milk, or coconut milk to taste.
You will then have a uniformly green super delicious, very nutritious veggie soup!
This soups freezes well for a few weeks. Make ahead of time and puree. Add the milk just before serving.
